It’s common for endurance athletes and competitors of races to “Carb load” the night before or several days leading up to a race to ensure that they will have enough fuel to make it through their race. The most popular things to eat tend to be foods like pasta and bread – grains that have a lot of energy.
Of course, for Paleo diet followers, it takes a little more creativity to get your carbohydrates since most vegetables tend to be lower in carbohydrates. Sweet potatoes are a favorite of mine though to replace my carbohydrates burned in exercise and fuel for the next run. I’m also eating my normal intake of fruit.
Baked sweet potatoes with a little bit of butter and salt: a great addition to any meal, including breakfast.
